Stage 2



Carry on with the previous foods.

You also add in:
  • Raw, organic/free range egg yolks.  Start with 1 egg yolk a day (added to a bowl of soup) and gradually increase until 1 egg yolk with every bowl of soup is well tolerated.  
  • Stews and casseroles made of meat, vegetables, and animal fat.  The more fresh animal fats from meats that are consumed the quicker the body will recover.
  •  Probiotic food into every serving.  Increased amounts of the probiotic foods from Stage 1
  • Fermented fish or Sweedish gravlax 
  • Homemade ghee, starting with 1 tsp a day and gradually increasing




Ghee
  • 1 pound unsalted butter
Process:
1. Preheat oven to 250* 
2. Place butter in an oven proof dish or pan. 
3. Bake for 45-60 minutes.
4. Take out very carefully, and pour the golden fat from the top, being careful to leave the white milk solids in the pan. 
5. Keep in a glass jar.  
6. It does not need to be refrigerated.


If I buy ghee, I like Pure Indian Foods found in most health food stores.



Zucchini Casserole
  • 2 pounds chicken, cubed
  • 6 zucchinis 
  • 1 teaspoon sea salt 
  • 1⁄2 cup stock
  • 1-2 Tbs rendered chicken fat 
  • 1/4 cup skinless tomatoes deseeded (optional)
Process:
1. Cube chicken in bite sized pieces. 
2. Deseeded zucchini and cut into bite sized pieces. 
3. Place chicken and stock in the bottom of a loaf pan 
4. Sprinkle with salt 
5. Top with zucchini, chicken fat and tomatoes. 
6. Cover  and bake at 350* for 45 minutes, or until chicken is cooked through and zucchini is soft.

Note:  I like to use Bionaturae Organic Strained Tomatoes in the glass jar.

  1. Is it necessary to use organic and grassfed products? I don't have access to these. Will I still see healing?
    I also cannot get raw coconut oil... if my diet is missing a few components, is that something to worry about or should I do the best I can?
    My digestion is pretty good and so are my stools (according to the chart) but I'm at an abnormally low weight (77 pounds). I currently do not have access to all the Gaps foods.

    I start off my day with fruit juice and mono meals of fruit and have broth and raw eggs all throughout the day and night. I intend to do this for 3-6 months, just till I can afford the other things. I know it doesn't sound like a lot but I am trying to do what I can with what I have right. I'd be happy to heal even just a little bit.

    1. If you can't do organic, NCM says to just do the best you can. You will still see healing! Try to keep your sugars low and your fats high! Start pouring olive oil over your food, add egg yolks and avocado into your bowls of soup. The most affordable option to doing GAPS with great healing would be to do big pots of soup! Skip the fruit juice for now. Add lots of fat into your soup. It will give you the energy and healing that you need.

  3. Keeping sugars low at the beginning will help starve out the bad yeast. I've found that the longer that I can keep the sugars out of the diet and the slower I worked through the stages - I hung out at stage 4 for 5 months - the more healing I saw. Keep your fats high. Your body will learn to use the fats for energy, not sugar. You may be very hungry at the beginning. I was! I had to eat every 2 hours for the first 8 months while my body was recovering.

Coming off a Raw Vegan diet where fruits were my main meal, I'm finding transition to be quite hard as I have to eat every hour or even 30 minutes or I feel dizzy but I'm trying to slowly increase my fats bit by bit (I have severe nausea and stomachaches if I take too much) I really hope Gaps will make me gain the weight I need...

    I'm used to eating fruit for energy... do you still limit your fruit intake? Were you able to maintain a healthy weight with Gaps and after how long? I'd love any hope/advice you can offer :) I've had a lot of failures with different diets but reading someone else's success stories always helps.

  5. I don't limit my fruit intake anymore...although, I do feel better if I keep my sugars low. I put 2 dates in my Vitamix and blend with my coffee every morning. And eat maybe 1oz of my honey sweetened chocolate/day. And that's about it for my sugar intake for the day. I was only able to finally start putting the weight on when I worked my way through intro, and stayed on stage 4 for about 5 months. I made sure to keep my fats very high. Daily enemas also made a huge difference!
